Gujiya

A divine combo of a crispy sweet delight, Gujiyas are a festive favourite for many. Learn to make this Madhur sweet, step by step here.

For dough:

  • 1 cup maida (refined flour)
  • 1 tbsp ghee (clarified butter)
  • 1 pinch of salt (optional)

For stuffing:

  • 1 cup khoya/mawa, crumbled
  • ¼ cup powdered Madhur Sugar
  • 2 tbsp raisins (kishmish)
  • 2 tbsp pistachios, chopped
  • 2 tbsp almonds, chopped
  • ¼ tsp cardamom powder

For sugar syrup:

  • 1 ½ cup Madhur Sugar
  • ¾ cup water
  • A few saffron (Kesar) threads

Other ingredients:

  • Oil for frying

  • Take a kadhai and add sugar and water into it. Stir occasionally.
  • Boil the mix till it thickens to a one string consistency.
  • Take maida and ghee in a mixing bowl and mix well.
  • Add water and knead the dough. Cover it for 15 minutes.
  • Pour ghee into a kadhai and add the crumbled khoya/mawa. Cook it on a medium flame.
  • Add powdered Madhur Sugar to the khoya/mawa and mix well. 
  • Now add almonds and raisins to the khoya mix. Sprinkle cardamom powder onto it and stir well.
  • Roll the dough into small sized rolls or peda.  
  • Roll the dough balls with a rolling pin.
  • Grease the edges of the flattened dough with ghee or oil.
  • Add a tablespoon of the prepared stuffing. Shape the dough with your hands.
  • Heat oil in a kadhai and deep fry the Gujiyas on a medium flame until they turn golden.
  • Drain the oil from the fried Gujiyas.
  • Immerse the Gujiyas in the sugar syrup for a few minutes.
  • Garnish it with dry fruit slivers and serve hot!
