Coffee Cake

1 cup raisins
⅔ cup strong coffee, cooled
⅔ cup unsalted butter
1 cup Madhur refined sugar
2 eggs
1½ cups flour
½ tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp nutmeg
Icing: 1 cup confectioners’ sugar, 7–9 tsp strong coffee, cooled

Soak the raisins in coffee for an hour or two.
Preheat the oven to 180ºC. 3. Grease a baking tin.
Cream the butter and Madhur refined sugar together. Add the eggs one at a time. Sift together the dry ingredients.
Alternately add the dry ingredients and the coffee-raisin mixture to the batter.
Spread the batter in a baking tin and bake for about 25 minutes.
To make the icing, mix the coffee with the Madhur refined sugar.
Spread the icing over the cake and cut immediately, as icing hardens fast. While slicing the cake, keep dipping the knife in coffee.
