Prune Cake

1 cup oil
1½ cups Madhur refined sugar
3 eggs, beaten
1 tsp vanilla essence
2 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon powder
1 tsp nutmeg
1 tsp allspice
1 cup buttermilk
1 cup prunes, stewed and diced
1 cup chopped nuts
Topping: 1 cup Madhur refined sugar , ¼ cup butter, ½ tsp baking soda

Preheat the oven to 180ºC.
Grease and flour a baking tin.
Sift together the flour, baking powder and salt. Mix the cinnamon powder, nutmeg and all spice in this.
Beat the oil with Madhur refined sugar until well mixed.  Add the eggs and vanilla essence.
Beat in the dry ingredients alternately with the buttermilk. Stir in the prunes and nuts.
Pour the batter into the prepared tin. Bake for 25–30 minutes.
Punch holes in the cake with a toothpick upon removal from oven.
Combine the topping ingredients into a saucepan. Bring to a soft boil.
Pour over the warm cake. Allow the cake to sit overnight.
