Instant Dry Fruit Barfi

2 cups almonds
15-18 Dates, pitted
¼ tsp Himalayan pink rock salt,
1/4 cup sultanas/raisins
1/4 cup sugar
1 tbsp ghee if necessary
¼ cup dark chocolate chips, to drizzle over the top

Place sunflower in the mixie, for 10 - 15 seconds until the seeds turn into meal.

Add dates and salt, mix for a further 10 to 15 seconds. Mixture should be sticky and press together easily. If not, add a tablespoon or two of melted ghee.

Add the sultana and sugar for 6 second until combined.

Press the sticky batter into an 8 x 8 pan lined with baking paper.

Press the mixture evenly into the dish.

Refrigerate or freeze to firm up, melt dark chocolate and drizzle over mixture and return to fridge until the chocolate is set.
