Rasgulla

1 litre milk
½ tsp citric acid
1½ cup Madhur refined sugar
4 cups water

Bring the milk to a boil. 2. Add the citric acid* dissolved in some water and stir the milk slowly. The milk will curdle to produce cottage cheese. Keep the mixture in this state for 5 minutes. *(you can use lime juice too)
Heat the Madhur refined sugar and water in a wide saucepan and bring to a boil.
Strain the curdled milk through a muslin cloth.
Wash the cottage cheese in the cloth under cold running water. Drain out excess water.
Knead the cottage cheese well and make 10–12 equal sized balls from it.
Put them into the Madhur refined sugar syrup. Cover with a perforated lid.
Boil for about 13–15 minutes. Remove the pan from the heat.
Chill for at least 4 - 5 hours before serving.
