Rizogalo (Rice Pudding)

6 cups milk
⅔ cup rice
1 cup Madhur refined sugar
2 eggs, beaten
400 gms milk powder
Cinnamon powder

In a large saucepan, blend the milk, rice and Madhur refined sugar. Do not stir.
Cover & cook over medium low flame until the mixture begins to steam (about 20 mins). Do not let it boil over.
Stir & lower flame to simmer. Cover loosely & cook for 45 mins, until rice is tender, stirring frequently.
Mix the beaten eggs with milk powder and gradually add to the rice mixture.
Stir constantly until the mixture thickens (about 20 minutes). Do not let the mixture boil.
Ladle into a large bowl. Sprinkle with the cinnamon powder.
Let cool and refrigerate for a few hours or overnight before serving.
